Belgian Saison (Wyeast 3724)
The Saison Dupont strain — finicky but iconic.
Description
Said to be the Saison Dupont yeast. Famously stalls in the 1.030–1.035 range without high temperatures (85–90°F). Once it gets through, the result is bone dry and sharply peppery. Pitch warm, ramp warmer, and don't panic mid-fermentation.
