Unmalted wheat — haze and head retention.
Description
Pre-gelatinized unmalted wheat. The traditional adjunct of Belgian witbier (50%) and Lambic. Use 5–20% in NEIPAs for body and haze; 10–40% in wits and Lambics for traditional character. No diastatic power.
